Dearth of Chaos Demons builds

I've played a number of games against demons now. It took me a while to get the hang of it, but now I feel like I keep seeing the same thing each time:

Mandatory: Flying monstrous creatures, screamers, invisibility.

Optional: Plague drones, nurglings and/or pink horrors hiding in the backfield, seekers.

It's all deathstars. Flying deathstar, 2++ rerollable deathstar, invisible deathstar, tough as nails deathstar. 2-5 unkillable units charging or flying around the table.

Are there competitive builds for demons that don't involve such small unit counts?

Not that I've seen, but the same can be said for every other army in the competitive scene.  Tyranids, Vanilla Marines, AdMech/Blood Angels, Necrons, Tau, Eldar, it's all pulling from a VERY limited pool of unit choices because that's what is competitive.  Mobility, Survivability and Destructive ability are what makes a unit tournament capable, and there's not a whole lot of units in the game that meet that requirement.  Cookie Cutter lists are normal, despite being pretty dull.  Takes some stroke of genius to make something that busts the meta and I haven't seen that yet.

Not that I've used it yet but I had a Daemon list with Core the Plague Bearers formation deep striking in (2 nurglings for objective holding in my DPZ) and the Seeker host running along the table super fast with a bunch of chariots. Idea is that plague units deep strike in using Icons (or is it instruments (the ones that let the next unit auto arrive)) in front of the seekers, near things I can threaten with Plague Swords (tanks etc) or as a screen for the seekers. Then turn 3 they deny the overwatch and my units of 15 seekers can charge in and rend stuff to death.

Could be fun, you'd need alot of seekers though. Would probably die to tau/eldar but could do decent damage. Tournament worth as a surprise list?

That's an interesting point, about a lack of competitive builds period.

But maybe we're talking past each other.

If you build a demon list, you're pushing forward with just a few near-unkillable units. Period. Usually, in the meantime, other small units are trying to hide and survive or distract.

If you build an Eldar list, you can build a push-forward list with 2+ wraithknights, or a holding-back list with mostly jetbikes.
The Gladius lets marines play MSU, but they can play it with a deathstar pushing forward (capt. beatstick), a deathstar deep-striking (conclave), with a variety of allied options (as I do), or even abandon the Gladius and take Khan-led bikers.
I'm not really qualified to speak of Tau. Maybe they have the same problem as Demons.
